OUR STORY
Born in the heart of America’s Deep South, in vibrant New Orleans—a city where you truly live to eat—I learned early that flavour isn’t a luxury. It’s the standard. Exceptional food was simply how life was lived, and ice cream wasn’t an afterthought; it was part of the culture, the celebration, the everyday joy.
After nearly three decades in the Chilterns, I felt a pull to bring that same uncompromising approach to my new home. In 2015, our artisan adventure began—built on a simple belief: if it’s worth making, it’s worth making brilliantly.
We pair rigorous technical craft with an unwavering love of quality, working alongside ambitious chefs to create bespoke flavours that surprise, delight, and push the boundaries of what ice cream can be. Every recipe is tested, tasted, refined—and made better through honest feedback and relentless attention to detail.

OUR JOURNEY
We came from a world where you solve problems with logic—consulting, analysis, neat conclusions. But ice cream doesn’t care about neat conclusions. It cares about texture, temperature, balance… and whether the last spoonful tastes as good as the first.
At the beginning in 2015, we had plenty of ambition and almost no technical knowledge. So we did what we’ve always done when something matters: we went all in. Back to university. Back to the fundamentals. Learning the science behind every silky mouthful—fat structure, freezing points, solids, emulsification. The kind of detail that turns a “recipe” into a formula… and takes two A4 pages of maths to get right.
Only once we could build the perfect base did we begin the next chapter: flavour. We worked alongside chefs to train taste, to understand contrast and depth, to build flavours that feel clean, confident, and unforgettable—not just sweet. From there, it was repetition. Tireless, obsessive, joyful repetition. Batch after batch, adjustment after adjustment, chasing that exact moment where the scoop is smooth, the flavour is alive, and you instinctively go back for another bite.
Because perfection doesn’t happen by accident. It’s engineered—then earned.

It’s the cornerstone of building the depth of skills necessary to create those exciting & vibrant communities.
We are proud to be a Buckinghamshire business supporting local producers. Take the dairy that makes our gelato so unmistakably rich. We use award-winning whole milk and double cream from Guernsey cows—widely loved for its naturally creamy character—and it comes from just up the road at a single farm we know and rate: Lacey’s Dairy. It’s the kind of ingredient you can taste immediately: cleaner, fuller, more luxurious… and proudly local.
We obsess over how ingredients are made, refined, and balanced, because that’s where a flavour goes from “nice” to can’t-stop-thinking-about-it. No shortcuts. No artificial fluff. Just real ingredients, treated with respect, so every scoop delivers the true, vibrant taste it promises.
